Generally,the lowest energy structure is the one with the smallest formal charges on the atoms. Formal charge on an atom $=$ (total number of valence electrons) $-$ (non-bonding electrons) $-$ $\frac{1}{2} 	imes$ (bonding electrons). For the Lewis structure of $SO_3$ with three double bonds: Formal charge on $S$ atom $= 6 - 0 - \frac{1}{2} 	imes 12 = 0$. Formal charge on each of the three $O$ atoms $= 6 - 4 - \frac{1}{2} 	imes 4 = 0$. Since all atoms have a formal charge of $0$,this structure is the most preferred and has the lowest energy.
