The carbon of the phenyl group is $sp^{2}$-hybridised,which gives the $C_{aryl}-O$ bond a partial double bond character,making it resistant to cleavage. Consequently,the nucleophilic iodide ion attacks the less sterically hindered methyl group,resulting in the formation of phenol and methyl iodide $(CH_3I)$.
