When soap is added to water containing grease,the hydrophobic part of the soap molecules attaches to the grease,while the hydrophilic part remains in the water. This process breaks the large grease droplets into smaller droplets,forming a stable emulsion in water,which is then easily washed away. This mechanism is known as emulsification.
